    For the lamb

    • 120 g (2 medium) of eggs
    • 60 g of sugar
    • 50 g of butter
    • 75 g of white flour of type 00
    • 8 g of baking powder
    • vanilla flavoring
    • 1 pinch of salt

    Materials Needed

    1. Separate the yolks from the whites and whip them until stiff peaks, adding a pinch of salt.
    2. In a bowl, pour the egg yolks, sugar and melted butter, and mix well until you get a very thick but homogeneous cream. Now add the flour, the vanilla flavoring and the previously sieved yeast.
    3. Gently add the egg whites until stiff, little by little, taking care to always mix from top to bottom.
    4. Grease and flour a lamb-shaped mold and pour the mixture into it.
    5. Turn on the oven at 180 ° C: when it reaches the temperature, bake the cake and let it cook for about 25 minutes, until the inside is dry (it is advisable to test the humidity inside the cake by pointing a toothpick) .
    6. Allow the cake to cool a little in the mold.
